Mini Pork Meatballs

For Christmas dinner at my mom’s house we tried something a little different this year and made a gorgeous fondue spread. We had tons of veggies, some great gluten-free focaccia to go with the cheese and beautiful duck breasts that my mom made a great bone broth to go with. We also tried to make these mini meatballs, and it’s not that we weren’t successful with them, it’s just that we ate them before they could make it to the plate…woops! I’m excited to share these easy, tasty mini meatballs. These meatballs can be tossed with a lovely tomato sauce, eaten by themselves, or, if you’re patient, dipped in your favorite fondue.

My first video!

Well folks, we’re branching out over here. I’ve made my very first video! I decided to go with a recipe I was very comfortable with and do turkey pesto meatballs and make a (very goofy) short video. This was a TON of fun, so I decided to keep at it. Turkey Meatballs with Pesto

A couple of weeks ago I shared my basil pesto recipe I got to thinking about what else I could use the pesto in, and turkey meatballs seemed like the perfect answer. I love turkey meatballs, my mom makes makes them all the time and they’re an easy way to add healthy protein to your day. The addition of pesto adds some nice salt, Parmesan and nutty taste which compliments the meatballs nicely. I also started using panko breadcrumbs with Italian seasonings which keeps these meatballs from getting too dense.
